Smoked Eye of Round, Reverse Seared

A cheap, extremely lean cut turned into deli-style roast beef. Two versions of the same roast: for cold cuts, smoke it low and slow and skip the sear entirely - that is the better method and the one to default to. For a warm dinner slice, pull earlier and finish with a hard sear in a 500F oven. Chilled overnight and sliced thin it feeds a week at 25-28 g protein per 100 g and almost no fat.

Method

    Dry brine (the night before)

    Salt the roast on all surfaces and leave it uncovered on a rack in the fridge overnight, or up to 2 days. The salt draws moisture out, dissolves, and gets reabsorbed seasoned - and the uncovered fridge time dries the surface, which is most of your crust later. Do not add more salt after this.

    Pick your method first

    COLD CUTS (default): smoke low at 200-210F and skip the sear. Slower, moister, better slicing. WARM DINNER SLICE: smoke at 250F, pull low, and finish with a hard sear. Everything downstream depends on this choice, so decide before the roast goes on. If you are batch-cooking for the week, you want the first one - the sear buys you a crust that mostly ends up trimmed or ignored on a cold sandwich, and costs you moisture in every slice.

    Season and probe

    Pat dry. Brush lightly with oil, then rub every face. Skip fresh garlic and fresh herbs - they scorch at sear temperature and go bitter over a long smoke. Insert a leave-in probe from the END, aimed at the geometric center: measure the roast externally, mark that depth on the probe with your fingers, and push in to the mark. The probe only reads at its tip, so placement is everything. Leave the fat cap on and facing up.

    Verify your probe

    Do this once, somewhere in the 100-110F range: check the same spot at the same depth with a handheld instant-read. Pellet grill probes commonly read several degrees low, and on a cut with a 15-minute window between good and dry that error matters. Shift your pull number by whatever the gap is. An ice-water slurry at 32F is the free way to calibrate both properly.

    Smoke - cold cuts version

    200-210F on the pellet grill, roast on a rack over a sheet pan. Pull at a TRUE internal of 127F, targeting about 132F after carryover. This takes noticeably longer than the 250F version - budget accordingly and let the probe decide, not the clock. The low pit temp is the entire point: it loses far less water, which is why this version comes out moister and yields more. No sear follows.

    Smoke - warm slice version

    250F on the pellet grill, roughly 25-30 min/lb, roast on a rack over a sheet pan. Pull at a TRUE internal of 118-122F - not higher - because the sear will carry it another 10F. Bumping to 275F partway shortens it meaningfully at little cost. Most of the smoke lands in the first couple of hours; once the surface dries, more wood is wasted.

    Rest

    Out to the counter, uncovered, same rack, 20 minutes. This evens out the internal temperature and dries the surface. Do not tent it - trapped steam re-wets the surface and, if you wrap it warm later, gives you more purge in the wrapper. For the cold cuts version this is the last heat step: rest, then go straight to cooling. For the warm slice version, ramp the oven to 500F during the rest and give it 5 extra minutes past the beep so the walls and racks are hot too.

    Sear - warm slice version only

    Skip this entirely if the roast is destined for cold cuts. Otherwise: pat dry once more, into the 500F oven, fat cap up, 6-8 minutes. Check at 5. Pull at 128-130F internal, or when the crust looks right, whichever comes first - the crust is cosmetic and the interior is not recoverable. Do not flip or move it. Expect smoke; run the vent.

    Cool and chill

    Rest 5 minutes, then carve only what you are eating now. Everything else goes back whole. Let it sit 20-30 minutes on the counter, then into the fridge - uncovered on a rack is best for slicing, wrapped is fine if you rested it properly first. Leave it whole and carve as you go; a whole roast holds far better than pre-cut slices. Weigh it now if you are tracking, but see the yield note - this number is not final.

    Trim and slice

    Once fully cold, peel the fat cap off - get a knife tip under a corner and work along the seam. Weigh the trim; the cap varies a lot between roasts. Slice ACROSS the end of the roast, bread-loaf style: the muscle fibers run lengthwise, so this cuts against the grain. Go as thin as you can manage with long draw strokes on a sharp knife. Twenty to thirty minutes in the FREEZER before slicing firms the meat and buys you noticeably thinner slices - without a deli slicer that is the main lever you have. Cold and thin is the whole game on this cut.

Notes

Nutrition is per 100 g of trimmed cooked meat, derived from actual cooks rather than a table. The listed numbers are from the low-and-slow v2 cook; the seared v1 version runs 149 kcal / 28 g protein / 3.3 g fat per 100 g because it lost more water and is therefore more concentrated. Same cut, same protein in absolute terms - just spread across more grams. TWO COOKS, COMPARED. v1 (Aug 11): 250-275F pit, pulled 118-122F, seared 6-8 min at 500F. 1,468 g raw -> 1,346 g post-sear -> 913 g trimmed lean after a 220 g warm carve and an 85 g cap, with ~128 g lost as purge. Net lean shrink about 16%. v2 (Aug 24): 200-210F pit, pulled 127F targeting 132F after carryover, NO SEAR. 1,480 g raw -> 1,371 g post-rest (92.6% yield) -> 175 g cap trimmed cold -> 1,196 g lean. Weights closed exactly, no unaccounted purge. Net lean shrink about 8%. WHY v2 WINS FOR COLD CUTS: half the shrink, a third more usable meat off a comparable roast, and a moister slice. The sear builds a crust that matters on a warm dinner plate and is close to irrelevant on a cold sandwich - you are paying real moisture for a cosmetic edge you will not taste under mustard. Keep the sear only when you are eating it hot the same day. WHY PULL LOW EITHER WAY: eye of round is nearly fat-free with a narrow window between rosy and gray. A thick gray band means the outside overcooked while the middle caught up. v2's higher pull number is fine precisely because the pit is so much cooler - the gradient from surface to center is gentle. DON'T TRUST THE FIRST WEIGH-IN. In v1 the post-sear weight overstated the yield by 128 g, which showed up later as purge on the board and the fridge sheet. In v2 a proper uncovered rest before wrapping meant almost nothing leaked. Either way, the number that counts is after it is fully chilled AND trimmed. THE FAT CAP: leave it on through the cook (it browns better than lean muscle and shields the heat-facing side), then trim it cold, when it is firm and peels rather than smears. Do not plan to eat it - neither cook runs hot enough or long enough to render a half-inch cap. Note that H-E-B is inconsistent about how much cap they leave: 85 g on one roast, 175 g on the next. At current beef prices that is real money in trim, so eyeball the case and pick the leaner one. RUB: v1 used pepper, garlic powder and onion powder. v2 used Tellicherry pepper and coarse coriander, which is the better pairing - coriander's citrus note lifts a mild cut and stands up to smoke without competing with it. Either works; do not use both sets at once. COLOR: expect rosy pink throughout, a dark rim (thinner on the unseared version), and a pink smoke ring just under the surface. The ring is a reaction with the smoke, not doneness - trust the probe. It reads pinker when chilled than it did warm. SMOKE: light hand. Oak, pecan, or fruit. Mesquite will bulldoze a cut this mild. A dry-brined surface takes less smoke than a wet one - a real tradeoff against the crust, and worth accepting. WHY THIS CUT: eye of round is one of the few places lean and cheap overlap. Chuck and brisket are cheaper per pound but carry 15-20 g fat per 100 g. This lands near 25-28 g protein and 3 g fat per 100 g, and it needs no reheating or assembly - the lowest-friction protein in the rotation.
