Sheet Pan Taco Chicken Thighs
A batch-cook of boneless skinless thighs in a chili-forward taco rub, roasted hot on two sheet pans. Built for meal prep — portions out across the week for bowls, wraps, fried rice, or folded into eggs.
Ingredients
6 servings- 8 boneless skinless chicken thighs (about 2.75 lb / 1250 g trimmed)
- 4 tsp canola oil
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 2 tsp paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 1/2 tsp salt
- 1 tsp black pepper
- 1/4 tsp Mexican oregano
Method
- 1Prep
Heat the oven to 425F. Trim the thighs and pat them bone-dry, pressing rather than wiping. Surface moisture is the enemy of both browning and rub adhesion — a wet thigh steams instead of roasting.
- 2Mix the rub
Combine the chili powder, cumin, paprika, garlic powder, onion powder, salt, black pepper, and Mexican oregano in a small bowl.
- 3Oil first, then season
Toss the thighs in the oil by itself until every surface is evenly slicked, then add the rub and toss again. Doing it in this order matters — oil and spice added together clump into wet paste in spots and leave others bare.
- 4Massage it in
Work the rub onto the meat with your fingers, getting into the folds and the undersides. Thighs are irregular and floppy, so a passive toss leaves the crevices unseasoned.
- 5Arrange
Lay the thighs flat on two parchment-lined sheet pans, spaced apart with no crowding. Set both pans side by side on the center rack, with a small gap between them for airflow.
- 6Roast
Roast 20 to 25 minutes, until the internal temperature reads 175F or above. Check the thinner pieces first. Broil the last 2 to 3 minutes if you want more color.
- 7Rest and portion
Rest 5 minutes before slicing or portioning. Expect about 1050 g cooked from 1250 g raw — a yield of roughly 0.84.
Notes
Pull at 175F, not 165F. Dark meat wants the higher finish to render its connective tissue, and it stays juicy there — 165F is a lean-breast number and leaves thighs slightly tough. From a blend jar: if you keep a salt-free taco base premixed, use about 38 g of blend for this batch and add the 1 1/2 tsp salt separately. The jar dose works out to roughly 19 g of blend per pound of thighs. Storage and reheating: keeps 3 to 4 days refrigerated. Store the portions in their own rendered juices rather than draining them. Reheat gently — low-power microwave in short bursts, or covered at 300F — and stop at warm rather than hot. The meat is already fully cooked; blasting it is what drives the juice out. For macro logging: weigh the cooked batch total and divide by the raw trimmed weight to get your own yield ratio. Individual pieces vary in size, so per-piece estimates drift, but the batch total reconciles accurately as long as portions are weighed.
