Sheet-Pan Chicken Thighs with Honey-Dijon Braised Gold Potatoes and Blistered Green Beans
One oven, one burner, everything lands together. Dry-brined boneless-skinless thighs roast on a sheet pan while gold potatoes braise into their own honey-dijon glaze — the braising liquid is the sauce, spooned over chicken and potatoes both. Frozen green beans roast alongside, no thawing. Cooks four thighs: two for tonight, two banked for tomorrow.
Ingredients
2 plates (2 thighs each) + glazed potatoes and beans- 4 boneless, skinless chicken thighs (~500g raw)
- Kosher salt (for the dry brine) and black pepper
- 1 tsp neutral oil (for the chicken rub)
- Smoked paprika + garlic powder + black pepper (chicken rub)
- 600g gold potatoes, halved if small, 1-inch coins if medium-large
- 24g butter (potato braise, measured)
- Chicken stock, enough to come halfway up the potatoes (~1 cup)
- 2 tsp dijon mustard
- 2 tsp honey
- Small splash of vinegar or lemon juice
- ~300g frozen green beans (straight from frozen)
- 10g neutral oil (for the beans)
Method
- 1Dry-brine the thighs
As far ahead as you can — ideally 20-30+ minutes — salt the thighs on all sides and leave them uncovered in the fridge. The salt seasons the interior and dries the surface for better browning. Same physics as fish, same payoff.
- 2Heat and cut (T-40)
Oven to 425°F. Halve small gold potatoes, or cut 1-inch-thick coins if they're medium-large. Halves brown better on their cut face; use coins only when halves would be too chunky to cook through evenly.
- 3Brown the potatoes (T-35)
Melt 24g butter in a wide pan over medium-high. Potatoes in cut-face-down, lid off, 6-8 minutes until that face is deeply browned. Don't move them while they brown — the color is the flavor base of the glaze.
- 4Roast the thighs (T-30)
Pat the thighs dry, rub lightly with oil, season with smoked paprika, garlic powder, and black pepper. All four on a sheet pan into the oven, 22-25 minutes. Pull at 175-185°F internal — thighs are collagen-rich and want the extra heat; 165 is a breast number, not a thigh number.
- 5Start the braise (T-28)
Pour chicken stock into the potato pan until it comes halfway up the potatoes. Lid on, drop to a medium-low simmer, and leave them to go custard-soft while everything else cooks.
- 6Beans in (T-22)
Frozen green beans straight onto a second sheet pan — no thawing. Toss with 10g oil and salt, into the same oven, 20-22 minutes, one stir midway. At 425°F they steam themselves dry and then blister, hands-off.
- 7Reduce to a glaze (T-8)
Lid off the potatoes, heat up, reduce the liquid hard. When it's nearly a glaze, add the dijon, honey, and a small splash of vinegar or lemon; swirl the pan to emulsify. Fork-test a potato — the centers should be custard, the edges still crisp from the browning.
- 8Plate and bank leftovers (T-0)
Two thighs and half the potatoes per plate, glaze spooned over both, beans alongside. The other two thighs rest under foil and go to tomorrow — thighs forgive reheating better than any white meat, and the air fryer is the right revival tool.
