Parmesan Roasted Baby Potatoes
Baby potatoes pressed cut-side down into a layer of oil, grated pecorino, and spices, then roasted until the cheese fuses into a golden crust that lifts off with them. Adapted from Confessions of a Fit Foodie.
Ingredients
6 servings- 680g baby potatoes (1.5 lb), halved
- 28g olive oil (2 tbsp)
- 33g grated pecorino romano or parmesan (1/3 cup)
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano or thyme
- 1/2 tsp paprika
- Olive oil spray
- Kosher salt
- Fresh parsley, rosemary, or chives to garnish (optional)
Method
- 1Heat and mix
Preheat oven to 400F. Stir the grated cheese together with the garlic powder, oregano, and paprika in a small bowl.
- 2Build the crust layer
Drizzle the olive oil into a 9x13 glass baking dish and tilt to coat the base. Spoon the cheese-spice mixture over the oil in an even layer. Do not spread or move it once it lands - disturbing it breaks up the crust.
- 3Set the potatoes
Place the potato halves cut-side down in a single layer, pressing each firmly into the cheese mixture. A single layer matters: any potato stacked on top never touches the crust.
- 4Top and roast
Spray the tops with olive oil spray and sprinkle with salt. Roast 35-40 minutes, until the potatoes are soft and the cheese crust is golden brown.
- 5Rest and lift
Cool in the pan 5 minutes before lifting with a spatula - the rest is what lets the crust release in sheets instead of shattering. Garnish with fresh herbs.
Notes
MACROS: the batch is ~935 kcal / 24g protein / 41g fat / 120g carb. Per-serving values below are 1/6 of the pan (~113g raw potato) - a small side. A realistic portion is a double serving (~310 kcal / 8P / 14F / 40C), or a third of the pan (~470 / 12P / 20F / 60C). PAIRING - MACROS: this is a carb-and-fat side with almost no protein, and the fat is the binding number. A double portion needs ~14g of fat headroom; a third of the pan needs ~20g. It works next to a lean protein anchor - cod, tilapia, chicken breast, lean beef - which leave the fat budget open. It does NOT fit next to salmon, egg bites, thighs, ground beef, or a cheese-loaded starch; those spend the budget themselves. Training-day side rather than a rest-day one. PAIRING - FLAVOR: the aged salt-and-funk of the crust wants something plain and mild beside it. Roast chicken, a simply baked whitefish, or a meatloaf all work. Skip it alongside anything already cheesy or heavily sauced. WHERE THE FAT IS: 27g of the 41g is the 2 tbsp of olive oil in the pan. That oil is doing two jobs - anchoring the cheese layer and shallow-frying the cut faces - so cutting it costs real crust. Tested alternative: 1 tbsp + parchment lands ~815 kcal for the batch but a thinner, more matte crust. The cheese is only ~130 kcal of the batch and carries most of the flavor; cut oil, never cheese. YIELD NOTE: 680g raw is estimated to cook down to roughly 420-545g depending on how hard the oven runs - unmeasured so far. Weigh the finished batch and pin it. Water loss does not change the macros; the batch is ~935 kcal regardless. Divide the pan by portions, not by cooked weight. SUBSTITUTIONS: quartered red, yukon gold, or russet potatoes cut to baby-potato size work. Parchment if sticking is a concern - not foil, which welds to the cheese.
