Not Your Mama's Meatloaf
A wood-fired take on classic meatloaf, smoked on a pellet grill and finished with a BBQ-apple juice glaze.
Ingredients
6 servings- 1 cup breadcrumbs
- 1/2 cup milk
- 2 tablespoons onion, chopped
- 1/2 teaspoon ground sage
- 2 teaspoons salt
- 2 eggs, beaten
- 2 pounds ground beef
- 1/4 pound ground sausage
- 1 cup BBQ sauce
- 1/2 cup apple juice

Preheat the grill to 225°F. If available, use Super Smoke.

Combine breadcrumbs, milk, onion, sage, and salt. Add the beaten eggs. Add both ground beef and ground sausage, and mix well. Place the mixture onto a sheet pan lined with butcher paper and form it into a loaf, packing tightly. Transfer to the fridge to rest for 20 minutes.

Hold the meatloaf on the butcher paper over the grill grate. Pull the paper back from the bottom toward you as you let the meatloaf land directly on the grate. Remove the butcher paper completely and cook for 2 hours, or until it reaches an internal temperature of 160°F.

Make the glaze: combine the BBQ sauce with the apple juice. Glaze the meatloaf during the last 20 minutes of cooking.

Let the meatloaf rest 5 to 10 minutes before slicing. Enjoy!
Notes
Add only as much milk as needed to bring everything together — too much liquid makes a sloppy loaf that can fall through the grate.
